The Best Bacon-y Potato Salad

A delicious bacon-y twist on this classic salad dish. Brilliant for barbecues, picnics or as a side dish to Sunday leftovers.

You will need

800g small new potatoes

3 shallots finely chopped

2 tbsp finely chopped pickled gherkins

5 tbsp vegan mayonnaise

2 tbsp plain vegan yoghurt

4 heaped teaspoons of Herby Hog Smoky Bacon flavoured seasoning

Chopped herbs to garnish

Preparation

Boil the potatoes for around 20 mins or until just done. Drain and leave to cool for around 10 minutes.

In a large bowl combine the mayonnaise, yoghurt and Herby Hog seasoning and mix well. Add the chopped gherkins and stir through.

Cut the cooled potatoes into small bite size chunks and add to the seasoned mayonnaise and yoghurt mixture. Mix gently to thoroughly coat the potatoes.

Sprinkle with the fresh chopped herbs and serve.
