Spicy Chorizo Cowboy Caviar
Once you’ve made this recipe, you’ll make it time and time again. Sensational as a side to many main meals it’s also great on it’s own as a salad with nachos.

Serves 4-6

You will need
For the salsa:
3 ripe tomatoes, seeded and diced
1 red pepper, chopped into small chunks
1 small red onion finely diced
2 large avocados peeled, stoned and diced
400g can sweetcorn, drained
400g can black beans, well rinsed and drained
Handful fresh chopped coriander
For the dressing:
2 tbsp lime juice
4 tbsp extra virgin olive oil
2 medium garlic cloves, crushed
2 tbsp white wine vinegar
2 tbsp Herby Hog Spicy Chorizo seasoning

Preparation
In a large mixing bowl, combine all the salsa ingredients and mix well.
In a separate bowl, mix the lime juice, oil, garlic, vinegar and seasoning and mix thoroughly. Pour over the salsa mix, combine until all the vegetables and beans are coated.
Serve chilled with tortilla chips or nachos
