Chargrilled BBQ Pineapple Salsa

Chargrilling pineapple on the bbq or skillet is a great way to bring out the caramel flavours making this salsa deliciously sweet and tangy.

Serves 4-6

You will need

1 small fresh pineapple, cored and sliced into 2cm thick rings

1 tbsp olive oil

1 red pepper finely chopped

1 small red onion finely chopped

1 small clove garlic, crushed

1 tsp lime juice

3 heaped teaspoons of Herby Hog BBQ Pork Seasoning

Handful of fresh chopped parsley

Salt and black pepper to season if required.

Preparation

Preheat the bbq or a skillet pan on the hob to a medium heat

Brush the pineapple slices with oil and bbq/fry until lightly browned and caramelised, around 5-10 minutes. Remove from the heat, leave to cool then chop into small chunks.

In a bowl add the remaining ingredients and mix well. Add the pineapple chunks and stir through. Season with salt and pepper if required.

Chill for around an hour before serving to allow the flavours to marinate together.
