Preheat the bbq or a skillet pan on the hob to a medium heat
Brush the pineapple slices with oil and bbq/fry until lightly browned and caramelised, around 5-10 minutes. Remove from the heat, leave to cool then chop into small chunks.
In a bowl add the remaining ingredients and mix well. Add the pineapple chunks and stir through. Season with salt and pepper if required.
Chill for around an hour before serving to allow the flavours to marinate together.
