Herby Glamorgan Sausages

Here’s our Herby twist on a Welsh favourite, cheesy, crispy and full of flavour.

Makes 6 Sausages

You will need

2 tablespoons vegetable Oil

1 large leek, chopped fine

1 clove garlic, crushed

3 heaped tablespoons of Herby Hog Sausage & Sage Seasoning

380g mashed potato

1 tablespoon mustard

50g vegan cheese, grated

80g breadcrumbs

pinch sea salt and pepper

For the coating:

200g gram flour mixed with 240ml water

200g plain flour

250g panko breadcrumbs

pinch sea salt

1 litre of vegetable oil for frying


Sweat the leeks and garlic in the oil in a large frying pan until soft. Then allow to cool.

Into a mixing bowl add the potato, mustard, cheese and Herby Hog Seasoning and stir well.

Add the cooled leeks and breadcrumbs and mix with your hands until it all comes together.

Portion the mix into 6 equal portions then form into sausages.

Coat the sausages first in flour, then the wet gram flour mixture and finally the breadcrumbs.

Shallow fry the coated sausage until golden. Serve immediately.
