Vegan Chorizo Spiced Guacamole
So quick to make, the smokiness of this recipe makes this guacamole extra special

You will need
2 ripe avocados
1 bunch of fresh coriander
4 ripe cherry tomatoes, quartered
1 lime
2 tsp Herby Hog Spicy Chorizo flavoured seasoning
2 tsp Chilli oil

Preparation
- Destone the avocados and scoop the flesh into a bowl.
- Roughly mash with a fork until the mixture resembles a rough paste
- Pick most of the coriander leaves, roughly chop them and add to the avocado mix. Stir in the tomatoes.
- Add the juice from the lime and the chilli oil, then sprinkle in the chorizo seasoning and mix well.
- Dress with a couple of coriander leaves and serve with toasted tortillas.
