Vegan Chorizo Spiced Guacamole

So quick to make, the smokiness of this recipe makes this guacamole extra special

Serves 4

You will need

2 ripe avocados

1 bunch of fresh coriander

4 ripe cherry tomatoes, quartered

1 lime

2 tsp Herby Hog Spicy Chorizo flavoured seasoning

2 tsp Chilli oil

Preparation

  1. Destone the avocados and scoop the flesh into a bowl.
  2. Roughly mash with a fork until the mixture resembles a rough paste
  3. Pick most of the coriander leaves, roughly chop them and add to the avocado mix.  Stir in the tomatoes.
  4. Add the juice from the lime and the chilli oil, then sprinkle in the chorizo seasoning and mix well.
  5. Dress with a couple of coriander leaves and serve with toasted tortillas.
