Vegan Bacon Smashed Avocado Brunch

Made in minutes, this recipe makes a great deliciously filling lunch option

Serves 4

You will need

 8 slices of sourdough or other rustic bread

300g cherry tomatoes, quartered

For the guacamole

4 ripe avocados

1 bunch of fresh coriander

1 lime

3 tsp Herby Hog Smoky Bacon flavoured seasoning

2 tsp olive oil


  1. Destone the avocados and scoop the flesh into a bowl.
  2. Roughly mash with a fork until the mixture resembles a rough paste
  3. Pick most of the coriander leaves, roughly chop them and add to the avocado mix.
  4. Add the juice from the lime and the olive oil, then sprinkle in the bacon seasoning and mix well.
  5. Toast the sourdough then pile the avocado mix generously on each slice. Top with the cherry tomatoes and sprinkle with the remaining chopped coriander.
