Vegan Bacon Smashed Avocado Brunch
Made in minutes, this recipe makes a great deliciously filling lunch option

Serves 4

You will need
8 slices of sourdough or other rustic bread
300g cherry tomatoes, quartered
For the guacamole
4 ripe avocados
1 bunch of fresh coriander
1 lime
3 tsp Herby Hog Smoky Bacon flavoured seasoning
2 tsp olive oil

Preparation
- Destone the avocados and scoop the flesh into a bowl.
- Roughly mash with a fork until the mixture resembles a rough paste
- Pick most of the coriander leaves, roughly chop them and add to the avocado mix.
- Add the juice from the lime and the olive oil, then sprinkle in the bacon seasoning and mix well.
- Toast the sourdough then pile the avocado mix generously on each slice. Top with the cherry tomatoes and sprinkle with the remaining chopped coriander.
