Italian Vegan Sausage Penne Pasta
This is a super easy and richly seasoned pasta dish. Perfect with a dressed salad and garlic bread.

You will need
1 tablespoon olive oil
1 medium onion, finely chopped
4 cloves garlic, crushed
450g plant-based mince
6 tsps. Herby Hog Sausage and Sage flavoured seasoning
235ml red wine
2 x 400g cans of chopped tomatoes
300g penne pasta
1 tablespoon chopped fresh parsley plus extra for garnishing
Ground black pepper to taste
Grated vegan cheese, optional

Preparation
- In a large heavy based pan, heat the olive oil over a medium heat.
- Sauté the onion and garlic until soft and translucent.
- Add the plant-based mince and cook until covered with the onion and garlic oil mix.
- Add in the sausage seasoning and fry lightly until all the mince is coated.
- Pour in the red wine and chopped tomatoes. Stir well, bring to the boil and then reduce to a simmer for a good 20 minutes until the sauce is rich and thickened.
- Meanwhile cook the pasta according to the pack instructions.
- Pour the sauce over the pasta and mix well until all the pasta is coated. Top with fresh parsley and cheese.
Top Tips
The tomato sausage mixture can also be used to fill cannelloni tubes, topped with more mixture and grated cheese. Oven bake at 180°C/355°F for 45 mins or until the pasta tubes are cooked through.
