Vegan Bacon Seasoned Chestnut Greens

This recipe is great for getting your fair share of your 5 a day and getting more vegetables into your kids!. The chopped chestnuts add a crunchy satisfying dimension to the dish.

Serves 4

You will need

100g Tenderstem broccoli, roughly chopped, including stems

100g Brussel sprouts, finely chopped

100g frozen peas

100g Savoy cabbage, finely chopped

3 heaped teaspoons of The Herby Hog Smoky Bacon flavoured seasoning

180g cooked whole chestnuts, roughly chopped into small pieces

2 tbsp Olive Oil

Preparation

Into a large frying pan heat the oil on a medium heat and add all the chopped vegetables. Sauté gently for around 4-5 minutes until they begin to soften.

Add in the chopped chestnuts and the seasoning.  Toss well in the pan for a further 2-3 minutes.

Serve immediately.

Top Tips

Makes a tasty side dish for Sunday lunches or as a great base to stir fries.

At Christmas, make this dish extra special by adding in 100g whole fresh cranberries with the vegetables – the dish will be ready when the cranberries begin to burst open over the heat.
