Cheddar and Bacon flavoured Scones

Makes 12 scones
You will need
225g self-raising flour
2 tsp baking powder
Good Pinch Mustard powder
55g unsalted butter, cubed
55g grated mature cheddar cheese
1 spring onion, finely chopped
3 teaspoons of Herby Hog Smoky Bacon flavoured Seasoning
150ml semi skimmed milk

Preparation
- Pre heat the oven to 180°C/365°F
- Sieve all the dry ingredients into a mixing bowl.
- Rub the butter into the flour until the mixture resembles a fine crumb. Mix in the spring onion.
- Add the cheese keeping back some to sprinkle on top of the scones
- Pour the milk into the mixture and work it together until reaching a dropping consistency. If the mixture is too stiff, add a little more milk. Knead the dough gently.
- Roll out the scone dough to around 2.5cm thickness. Cut out roundels or cut into equal triangle shapes and place on a well-greased baking tray.
- Brush the top of each scone with milk, sprinkle with the remaining cheese and finely dust with more Bacon seasoning.
- Bake in the oven for 15 minutes or until the scones are golden brown
Top Tips
Enjoy as a quick lunch with various fillings, such as cream cheese and cucumber, or sliced tomatoes and crisp lettuce.
These scones also make a great alternative to bread when served warm with soups.
